Mexican food is never a letdown!

I swear you can never go wrong with Mexican food, and this meal is not the exception to the rule. If you want a meal that has all of the flavor and the ingredients you like, then these beef fajitas are it.

You will want to make sure you have beef strips, onion, red bell pepper, a taco and fajita spice mix or taco seasoning, tortillas, salsa, shredded cheddar cheese, or Mexican blend cheese.

If you need to substitute these ingredients, try going with beef chuck, chicken, pork, fish, red onion, green pepper, cumin, paprika, lime, corn tortilla, tomatoes, and Queso Blanco.

Start by cooking the beef, onion, bell pepper, and spice mix. You should add water to make sure things do not burn or dry up. This process should take about 10 minutes, but the time depends on what meat and ingredients you end up using.

Serve your fajita mix with warm tortillas, which you can toast for a few minutes on the stove burner. Separate the toppings into containers so everyone can create their own fajita.

Freezing and Unfreezing the Fajitas

To save these fajitas for later, leave the beef uncooked, and freeze it. In another container, mix the onion and red bell pepper. You can save the spices, salsa, and cheese separately in small containers.

When you are ready to make your fajitas, defrost everything in the fridge, and cook the beef and veggies according to the instructions.

You can serve your fajitas with rice, a bit of cilantro, and guacamole!
