These freezer-friendly cheese spinach egg bites are some of my favorite snacks, breakfast dishes, or even as a side dish. I prepare this recipe very often, especially because it is easy to adjust the ingredients and alter it as much as you need to.
This Freezer-Friendly Cheese Spinach Egg Meal Is Good Any Day

To prepare this meal, I go with large eggs, 2% milk, shredded cheddar cheese, scallion, baby spinach, red bell pepper, cooked bacon, garlic, and Italian seasoning.
You can substitute some of these with egg whites, half and half, Swiss cheese, onion, arugula, mushrooms, ham, garlic powder, dry oregano, and dry thyme.
I like to prepare these egg bites using a muffin tin, so I start by preheating the oven and coating the tin with some cooking oil spray. In the meantime, I suggest you whisk the eggs with the milk. You can start stirring all the ingredients carefully, and then pour the mix into the muffin tin. Be sure to leave some space at the top, so the egg bites expand properly.
Once your oven is hot enough, bake your egg bites for 20 minutes or so. This time may vary because of the ingredients you use, as well as whether you use whole eggs or egg whites only.
You can enjoy these bites at room temperature, or save them in the fridge for up to four days.
Freezing and Unfreezing the Egg Bites
If you want to save this meal for later, bake it as directed, and then let your bites cool down entirely. Freeze in an airtight freezer container for up to two months, but be sure to check on them often. When you are ready to eat them, thaw them in the fridge, and bake for 10-15 minutes at 200 degrees F. You can also microwave them for 30 seconds to one minute.

Prepare 6 egg bites for now and 6 for the freezer.
Ingredients
8 large eggs
1/2 cup (64 g) shredded Cheddar cheese
1/4 cup (60 ml) 2% reduced-fat milk
1/4 cup (32 g) chopped scallion
1/4 cup (32 g) chopped fresh baby spinach
1/4 cup (32 g) diced red bell pepper
1/4 cup (32 g) chopped cooked bacon
1 garlic clove, minced
1 tsp Italian seasoning blend
Cooking oil spray
Directions
- Preheat your oven to 350 F (121 C).
- Spray some cooking oil on a standard muffin tin. Set aside.
- Whisk the eggs and milk in a mixing bowl.
- Add in the cheese, spinach, scallion, bacon, bell pepper, garlic, and the Italian seasoning.
- Pour this mixture into the oil coated muffin tin. Fill them halfway.
- Bake for 16 to 20 minutes, until the eggs are set.
- Serve warm.
