This dish is not hard to make, but you do need certain ingredients. Use oil, onions, garlic, ginger, garam masala, turmeric, coconut milk, tomatoes, and prawns. If these are not readily available, try substituting them for things like butter, coconut oil, scallions, powdered garlic, powdered ginger, cumin, allspice, heavy cream or sour cream, canned tomatoes, and shrimp, or the meat of your choice.
Begin the cooking process with the onions first, as it allows them to get soft and brown. You can add the spices once the onions start to turn golden, and then add the coconut milk and tomatoes. Here you want to lower the heat so things begin to simmer.
In my experience, 15 minutes is plenty of time for the sauce to thicken. Make sure to add your prawns, fish, or meat with enough time as well.
Freezing and Unfreezing the Prawn Curry
Keep in mind that if you want to freeze your curry, you should not add the prawns. Follow the same steps, but stop before adding the meat or seafood. Allow your curry to cool down entirely and then separate it into freezer bags or airtight containers.
When I need to use my freezer-friendly prawn curry, I place it in a saucepan over medium heat. Once your curry has started to thaw, you can add some water and increase the heat. Add the prawns, seafood, or meat you like and cook thoroughly.
Serving Suggestions
Serve this yummy curry with some rice, flatbread, or rice noodles. Add a splash of lime and some Thai basil right before serving! Enjoy!

Ingredients
2 tbsp oil
2 onions, finely chopped
5 cloves garlic, finely chopped
small piece of ginger, peeled, grated
3 tbsp garam masala
2 tbsp ground turmeric
3.5 cups (approx. 800ml) coconut milk
6 cups (approx. 800g) chopped tomatoes
2.2 lbs (approx. 1kg) frozen jumbo king prawns

Directions
- Heat oil in a large saucepan over medium heat.
- Cook onions for about 10 minutes until softened.
- Add in the ginger, garlic and spices. Stir continously for about 20 seconds until the aromas hit you.
- Add coconut milk and tomatoes.
- Increase heat then bring mixture to boil.
- Once boiling, reduce heat to low. If you’re using fish chunks, now is the time to add them.
- Simmer until the sauce thickens. About 15 minutes.
- Season with salt and pepper.
- Serve and enjoy!
