These freezer-friendly quiche bites are very easy to make and will take a few minutes total. If you are like me, then you like to plan, and with this recipe, you can save your quiche bites for later. I even make this recipe for my kids, so they have something to eat when I’m not at home.

For this recipe, I like to use large eggs, 2% milk, salt, black pepper, cooked ham, cheddar cheese, onion, and mini tart shells.

You can replace some of these ingredients with other foods, including egg whites, half and half, cumin, dry oregano, bacon, Swiss cheese, mushrooms, and red onion.

To start with, I suggest you preheat your oven to 375 degrees F. While this is happening, whisk the eggs, milk, salt, and pepper in a bowl. You can stir in the ham, cheese, and onion slowly.

In the meantime, place the tart shells on a baking sheet, and spoon the egg mixture into the shells. Bake for about 30 minutes, but check on your bites often, as it may take less time to set.

If you want to save these quiche bites for a few days, place them in an airtight container for about four days in the refrigerator. You can reheat them in the oven or microwave.

Freezing and Unfreezing the Quiches

To save these quiche bites for a later time, let them cool down entirely. Place them in an airtight container for up to three months, but make sure to label them so they do not go bad. When you are ready to eat them, remove your quiche bites, and bake them at 300 degrees F for about 15 minutes, or until the desired temperature.

If you prefer, serve your mini quiche bites warm with a piece of chicken, turkey sausage, or on their own.

Makes 24 mini quiches. Prepare 12 for now and 12 for the freezer.

Ingredients

  • 24 store-bought mini tart shells

  • 4 large eggs

  • 1 cup (128 g) cubed cooked ham

  • 1 cup (240 ml) 2% reduced-fat milk

  • 1 cup (128 g) shredded Cheddar cheese

  • 1/4 cup (32 g) diced onion

  • 1/4 tsp salt

  • 1/4 tsp ground black pepper

Directions

  • Preheat your oven to 375 F (190 C).
  • Whisk the eggs, milk, salt and pepper in a large mixing bowl.
  • Add in the ham, cheese and onion.
  • Put the tart shells on a rimmed baking sheet.
  • Gently spoon the mixture into the tart shells.
  • Bake until the eggs are set. About 25 to 30 minutes.
  • Serve and enjoy!
