Try This Freezer-Friendly Spanish Seafood Stew For A Change
For this meal, you will need olive oil, onions, garlic, paprika, cayenne pepper, dry white wine, tomatoes, potatoes, tomato puree, chorizo, black olives, chickpeas, seafood, and parsley.
If you need to substitute some of these, go with leeks, celery, chili powder, dry sherry, sweet potato, cherry tomatoes, cured chorizo, lentils, shrimp, and cilantro.
You can start cooking the onions first, then add the garlic and spices. Slowly add in the wine, tomatoes, potatoes, and tomato puree. When the potatoes are ready, add the chorizo, olives, and chickpeas, and finish off with the seafood.
Allow everything to simmer for about 10-15 minutes, or until you see that the seafood is cooked enough. Season to your taste and serve with parsley on top, plus a drizzle of olive oil.
Freezing and Unfreezing the Seafood Stew
When you need to freeze your Spanish seafood stew, follow all the steps except for the seafood. Allow your mix to cool down entirely and then portion it up into freezer bags that you should lay flat. Once your bags are solid, you can stack them upright.
Once you are ready to prepare your frozen stew, simply empty it into a saucepan with some water, cover, and cook over low heat. Slowly increase the heat and cook until the food is hot. Add your frozen seafood and simmer for another 15 minutes, or until the seafood looks ready.
Serve your Spanish seafood stew with toasted bread, a wedge of lemon, and even more olive oil! Enjoy making this delicious stew in just a few minutes any day!
