Ingredients

  • 2 lbs (900 g) frozen mixed seafood

  • 6 1/4 cups (800 g) chickpeas

  • 6 1/4 cups (800 g) chopped tomatoes

  • 1 1/4 cup (300 ml) dry white wine

  • 6 large potatoes, sliced into 1 cm cubes

  • 3 cloves of garlic, finely chopped

  • 2 handfuls of black olives, pitted

  • 2 onions, finely chopped

  • 2 chorizo rings, skin removed, chopped roughly

  • 2 tbsp of oil

  • 2 tbsp smoked paprika

  • 2 tbsp tomato puree

  • 4 tbsp finely chopped parsley leaves

  • 1 tsp cayenne

Directions

  • Using a large saucepan, heat the oil over medium heat.
  • Cook onions, stirring often, for about 5-10 minutes until softened.
  • Add in garlic and spices. Stir continuously for about 30 seconds until the aroma is released.
  • Add wine and let it sizzle.
  • Add chopped tomatoes, potatoes, and tomato puree.
  • Add some salt and pepper.
  • Cover saucepan and simmer for about 15 minutes.
  • Mix in the chorizo, olives, and chickpeas and halve the mixture.
  • Add half of the frozen mixed seafood.
  • Reduce heat to low, cover pan and simmer for about 10-15 minutes.
  • Season with salt and pepper.
  • Sprinkle parsley.
