This ground chicken Italian seasoning is perfect for any dish, including turkey! You can use it whenever you need to make a quick but tasty dinner. You can make this blend at home without much effort and save it for later too.
Sometimes, I make two batches at once, save them in a Mason jar at home, and use it as I need. You would be surprised at how many times family and friends have asked to take some home.
Bring the herbs and spices!
This ground chicken Italian seasoning contains my all-time favorite herbs and spices. For this recipe, I use dried basil, oregano, rosemary, sage, thyme, garlic powder, dry parsley, and onion powder. You can add pepper and salt if you want to.

However, I like to prepare my fresh chicken with butter, chopped garlic, paprika, salt, onions, fresh herbs, and lemon. Of course, I add the Italian seasoning as well. You can include fresh herbs like rosemary, thyme, and celery if you’d like.
You can use a dehydrator to dry your herbs at home or go the old fashioned way and just let it dry naturally until it reaches a crinkly texture. You can learn more about drying your herbs in a dehydrator in this excellent article.
When you choose the fresh chicken, remember to allow the chicken to sit in the refrigerator with the rub so that it absorbs all the flavors. You also want to let the bird sit with the lemon wedges, celery, and herbs for a while. All these steps can also be applied to a turkey if you want to try that instead.
If you choose to make dehydrated ground chicken, you will have meat that lasts longer and can be used any time, anywhere. Save the chicken and Italian seasoning for a later occasion. Or serve it right away, as the flavor will be equally tasty.
Serve your chicken with some potatoes and green beans, or rice and broccoli! You can even keep the Italian seasoning and dehydrated chicken handy for a camping trip, or a long day at work.

Ingredients
- Italian Seasoning
2 tbsp dried basil
2 tbsp dried oregano
2 tbsp dried rosemary
1 tbsp ground sage
1 1/2 tbsp dried thyme
1 tbsp garlic powder
1 tbsp dried parsley
1/2 tbsp onion powder
- Ground Chicken Italian Seasoning
4 – 5 lbs (1.8 – 2.2 kg) whole chicken
2 tbsp melted butter
1 tbsp Italian seasoning
1 tbsp finely chopped garlic
1 tsp paprika
1 1/2 tsp salt
1 medium onion, quartered
1 lemon, quartered
any fresh herbs like celery, thyme and rosemary
Directions
- Italian Seasoning
- Mix all ingredients in a bowl and stir.
- Store in airtight container or a ziplock bag.
- Ground Chicken Italian Seasoning
- Rinse chicken well and dry with paper towels
- Season the chicken generously, inside and out, with salt and pepper
- Mix the melted butter, italian seasoning, garlic and paprika.
- Rub chicken thoroughly with the spice combination inside and out.
- Stuff cavity with lemon wedges, celery and herbs
- Refrigerate for about 24 hours or until ready to cook.
- Preheat oven to 190 C (375 F).
- Add onions in a roasting pan and then place the chicken breast-side up.
- Roast in 190 C (375 F) oven temperature for about 1 hour and 15 minutes.
- Let chicken stand for 10 – 20 minutes before slicing so the juices will have time to settle back into the meat.
