While many may believe an instant pot BBQ chicken to be simple and boring, this dish is complex and extremely flavorful. I love how varied this dish is and how many things I can do with it. From sandwiches, to salads, and main dishes, this chicken is perfect and will never disappoint.

Instant Pot BBQ Chicken For A Quick and Tasty Meal

BBQ is never a bad idea!

To prepare this dish, I use tomato paste, molasses, maple syrup, apple cider vinegar, coconut aminos, garlic, paprika, Dijon mustard, sea salt, onion, apple, bacon, and of course, chicken. You can certainly replace some of these as needed with things like tomato sauce, brown sugar, honey, red wine vinegar, liquid aminos, soy sauce, garlic powder, cumin, ground mustard, onion powder, peaches, turkey bacon, and turkey.

I suggest you begin by combining your sauce ingredients in a bowl. You can add the onions and apples. Wrap the bacon around your chicken breasts and place in the instant pot along with one cup of water.

You can then add the BBQ sauce mixture that you had set aside. Cook everything for 10 minutes at high pressure. Let the instant pot release pressure naturally and then quick-release any remaining pressure.

Freezing and Unfreezing the Instant Pot BBQ Chicken

One of my favorite things about this easy recipe is that it can be saved for later. To do this, prepare your BBQ sauce, wrap the bacon around the chicken, and pour the sauce over the chicken along with the onions and apples. You can divide the chicken in various labeled containers and freeze them.

When you are ready to cook, all that is left to do is follow the directions from above. Keep in mind you may want to add more time if your chicken is too frozen.

Serving Suggestions

Serve your yummy BBQ chicken on a potato bun, with some coleslaw, or shredded on top of fries.

Ingredients

  • 2 lbs quarter chicken, boneless breasts

  • 8 oz (230 ml) tomato paste

  • 3 tbsp molasses

  • 1 tbsp maple syrup

  • 1 tbsp apple cider vinegar

  • 2 tbsp coconut aminos

  • 2 tsp minced garlic gloves

  • 2 tsp smoked paprika

  • 1 tbsp dijon mustard

  • 1/2 tsp salt

  • 1 1/4 cups (160 g) diced onions

  • 4 cups (512 g) diced apple

  • 8 pieces of bacon

Directions

  • Mix in the apples and diced onions.
  • Wrap the bacon strips around the chicken breasts and place them in your instant pot.
  • Pour 1 cup (230 ml) of water.
  • Top with the prepared BBQ mixture.
  • Secure lid and seal the steam nozzle.
  • Pressure cook on high for 10 minutes.
  • Release pressure naturally for 5 minutes. Quick release remaining pressure after.
  • Remove chicken breast from instant pot and serve with BBQ sauce on the side.
