But have you tried making lasagna in it? It will only take a few minutes and you will be left with a fantastic Italian dinner!

When it comes to cheese, this lasagna doesn’t muck around! So, you will need to have some options available. I like to use ricotta, mozzarella, and Parmesan. You could try buying a pre-packaged Italian cheese mix, Swiss cheese, or Gouda cheese. The more cheese, the merrier!

Ingredients

  • Meat Mixture
  • 1 lb lean ground beef

  • 1/2 tbsp kosher salt

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp Italian seasoning

  • 1/2 tsp pepper

  • Cheese Mixture
  • 1 cup cottage or ricotta cheese

  • 1 egg, beaten

  • 1/2 cup mozzarella cheese, shredded

  • 1/2 cup parmesan cheese, grated

  • 1 1/2 tsp garlic powder

  • 1 1/2 tsp onion powder

  • 1 1/2 tsp Italian seasoning

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1/4 cup chopped fresh parsley

  • For layering
  • 1 jar (24 oz) pasta sauce

  • 5-6 no-boil lasagna noodles

  • 1/2 cup mozzarella cheese, shredded

  • 1/2 cup parmesan cheese, grated

  • For pot
  • 1 1/2 cups water

Directions

  • Select the SAUTE function on the instant pot display panel.
  • Combine all the ingredients for the meat mixture, then cook until no pink remains. Make sure to break up the meat as you go.
  • Drain then set aside.
  • Combine all ingredients of the cheese mixture in a large bowl. Mix it until it is uniform in consistency, then set aside.
  • Coat a 1.5 qt (Approx. 1.4L) casserole dish, or 7 inch (178 mm) pan, with non-stick cooking spray.
  • Place a single layer of the no-boil noodles in the pan.
  • Pour 1/3 of the pasta sauce evenly over the noodles.
  • Spread half of the meat mixture over the sauce and then half of the cheese mixture.
  • Repeat steps 6-8.
  • Pour remaining 1/3 of pasta sauce evenly over noodles, then top it with half cup each of mozzarella and parmesan cheeses.
  • Spray one side of a piece of foil with non-stick cooking spray and cover the pan loosely, spray-side down.
  • Rinse pot then add 1 1/2 cups (360 ml) of water.
  • Place the pan or casserole on the steam rack then secure lid. Ensure vent is closed.
  • Select Manual, or Pressure Cook function on the display panel, then program the pot for 22 minutes using the +/- buttons.
  • Once time is up, release pressure naturally for 15 minutes, then quick-release the remaining pressure.
  • Remove pan from pot.
  • Remove foil and replace any cheese that sticks.
  • Set pan or casserole under the broiler for 5 minutes, or until the cheese starts to brown.
  • Remove pan to cooling rack. Let it sit for 15 minutes to firm up.
  • Serve and enjoy!
