I like to make these instant pot pork chops on Sunday nights just when my family thinks we are going to have leftovers, I surprise them with this quick and tasty meal. These pork chops taste fantastic fresh, but the flavor is the same if you decide to freeze them for later.

To make this filling meal, I use boneless pork chops, chicken broth, apricot jam, brown sugar, garlic, salt, pepper, cumin, chili powder, ginger, and mandarin oranges. Since some of these are not readily available at all times, you can substitute them. Go with things like regular pork chops, beef, beef or vegetable broth, apricot juice, honey, garlic powder, Cayenne pepper, paprika, and orange slices.
I suggest that you add your pork chops to the instant pot first. You can then add the broth on top. While you do this, be sure to mix the apricot jam, brown sugar, and spices in a small bowl. Add the mix to the pork chops and then the mandarin oranges on top.
The total time to cook these pork chops is around 10 minutes at high pressure, but the time can vary depending on the size of your pork chops and the number of servings you are preparing.
I like to let the instant pot release pressure naturally for 5 minutes and then manually release whatever pressure is left. You can choose to carry out this step whichever way is easier for you.
Serve your tasty pork chops over white rice and sprinkle fresh parsley on top.
Freezing and Unfreezing the Pork Chops
To save this dish, mix everything in one container and seal tightly. Label your container and freeze it. When you are ready to cook, simply add everything to the instant pot and cook on high pressure for 10 minutes. Follow the instructions above.
