  • 2 cups (256 grams) raspberries

  • 2 cups (256 grams) gooseberries

  • 4 cups (512 grams) sugar

  • a pinch of salt

  • 1/2 tsp citric acid


  • Using a wide saucepan, combine the fruits and sugar. Stir and then set aside for 1 hour.
  • Boil fruit and sugar gently. Stir and remove any foam that rises to the surface.
