To make these tasty fritters, you will need sweetcorn, either canned or frozen. If you don’t have it available, use corn on the cob, but make sure you cook it first.
You will also need spring onions, which add crunch and tanginess, but you can try other vegetables like scallions, onions, chives, or parsley.
As for the dough, you need flour, eggs, and milk. You can replace the flour with a gluten-free alternative, like cornmeal, almond flour, chickpea flour, or rice flour.
Keep in mind, though, that the flavor will change a bit. If you can’t use eggs, flaxseed, or an egg replacement, will do. As for the milk, you can try half and half, cream, or coconut milk.

Ingredients
3 cups (approx. 400 g) frozen sweetcorn
8 spring onions, finely chopped
8 heaped tbsp flour
4 eggs
4 tsp coriander leaves, chopped
4 tsp paprika
12 tbsp milk

Directions
- Combine all ingredients in a large bowl.
- Add a pinch of salt and pepper. Stir well.
- Using a large frying pan, heat a tablespoon of oil over medium heat.
- Form a fritter by scooping a tablespoon or two of batter into the pan.
- Cook for 5 minutes until it is golden and cooked through. Turn occasionally to prevent scorching.
- Place on a plate lined with kitchen paper.
- Cook remaining batter and serve.
