Overall, this recipe will not take long to make and it will also be useful later.

These Sweetcorn Fritters Are Perfect Fresh Or In The Freezer

To make these tasty fritters, you will need sweetcorn, either canned or frozen. If you don’t have it available, use corn on the cob, but make sure you cook it first.

You will also need spring onions, which add crunch and tanginess, but you can try other vegetables like scallions, onions, chives, or parsley.

As for the dough, you need flour, eggs, and milk. You can replace the flour with a gluten-free alternative, like cornmeal, almond flour, chickpea flour, or rice flour.

Keep in mind, though, that the flavor will change a bit. If you can’t use eggs, flaxseed, or an egg replacement, will do. As for the milk, you can try half and half, cream, or coconut milk.

This dish also needs a bit of seasoning, which is why using coriander leaves and paprika is a great choice. Other spices that could work include cumin, turmeric, oregano, and garlic powder.

Now that you are ready to cook, it will only take you a few minutes, but make sure to monitor your fritters so they don’t burn or get too many air bubbles.

Once they look brown and golden set them aside on a plate to drain and cool down.

Don’t know what to use these sweetcorn fritters with? You can use them as a breakfast item with eggs and bacon. They are also amazing in place of chips when you make guacamole or salsa.

If you want, you can also use them as a side dish with meat and sauces.

Serve these fritters warm, or save them for later use without much trouble!

To Freeze:

Make sure the fritters have completely cooled. Place in a resealable freezer bag with parchment paper separating each fritter.

Heat fritters in a preheated oven for 15 to 20 minutes until it is hot through. Use a little vegetable oil to “re-crisp” the fritters in a pan. Or you can just defrost overnight and skip the oven heating.
